Our girls' rec softball league is officially over and I'm downright giddy about being able to FINALLY plan/cook better meals and being able to sit down together as a family for dinner again! Those 5:45 games, be-there-at 5:15 games/practices were totally cramping my meal planning ways!
Anyway, we still have practices and other commitments in the evenings, so the need for quick & easy meals remains, but no rec softball frees up a good deal of time!
This week I have breakfast scheduled twice (because? Why not?!?) and two different crock pot meals planned, making this menu seem easy peasy.
Monday: We had BLT Pizza...perhaps the last time this year???
Tuesday: French Toast Bake. This is one of my favorite meals because I can, literally, throw it together in 10 minutes in the morning, then it is ready all ready to go in the oven that evening.
Wednesday: Pot Roast and baked potatoes
Thursday: Crock Pot Chicken Alfredo
Friday: Pampered Chef Large Bar Pan Pancakes
Yesterday as I was carrying all my fall decor up from the basement, I realized that I never posted pics of my "spring/summer" mantle. Really, not necessarily a big deal OR even worthy of sharing, HOWEVER, next spring when I'm ready to put up a next mantle, I DO want to remember this one. It was easy, fun, and just very "us." You know? So, here it is:
