This is my day (well, pretty much my week, if I’m being honest). Not even joking.
So, as much as I’d love to hang around and chit chat, chances are I’m probably late for my next date.
This is all probably good news for you, seeing as now I don’t have time to carry on about what an awesome weekend we had. Let’s just say that it was full of fun with friends & family and plenty of time at the ball parks. Proof:
Oh, and I did manage to squeeze in a brief meal planning session, with minimal effort.
Here’s what’s on the menu this week:
Monday: Slow Cooker Meatball Subs
1 bag frozen meatballs
1 jar grape jelly
1/2 (ish) bottle BBQ sauce
Sub rolls from the bakery
Mix first 3 ingredients in the crockpot. Cook on low for 3 hours or until heated through. Serve on rolls with cheese to top.
Tuesday: Chicken Salad Sandwiches/Leftovers (can you hear my children groaning?!?)
2 cans white chicken
1/4 cup shredded carrots
1/4 diced celery
1 tbsp red onion, minced
1 tbsp light mayo (I mix mayo with plain Greek yogurt)
1 tsp red wine vinegar
salt & pepper
Combine chicken, celery, carrots, onion, mayo/yogurt,vinegar, salt & pepper. Spread on bread, top with tomatoes & cheese slices.
Wednesday: Pesto Chicken with carrots and red potatoes
Thursday: Grill burgers/brats
