Meal Planning Monday

A grocery store near us is going out of business and as I was driving by between softball games on Saturday, I happened to notice that they were having a HUGE sale.  Not being one to like feeling as though I’m missing out, I made a spur-of-the-moment decision to stop and get our groceries for the week…even though I had yet to meal plan OR make a list.  Now, those that know me know that I am VERY calculated/borderline OCD about my meal planning and list making, so this was {way} out of my comfort zone.  BUT, I had a two hour window of time and the big sale incentive was enough to make me throw together an easy meal plan and list IN THE GROCERY STORE PARKING LOT.  I quick typed out a few of our go-to dinners in the notebook on my phone, added the ingredients to my Grocery IQ app, and with a little pep talk (ok, juice box bribery), the little girls and I were off.  An hour later, we emerged with food for the week and a feeling of success! 
All this to say that this is why I’m such a firm believer in having several quick and easy go-to dinners!

I highly doubt you’ll want or need the recipe for these, but just in case, here ya go:
Turkey Caesar Pita Pockets
Chicken and Noodles
Taco Bowls (carried over from last week)
Brats & pasta salad – you got this!
Homemade Pizza Rolls (I’m having dinner with friends, so J’s taking care of this one.)
Pancakes – we only ever make them using our Pampered Chef Bar Pan and {this} recipe.

In other non-food related news…My little Kai Pie has strep throat again.  That’s 3 times in 6 weeks and this mama is NOT happy about it. We’re working with the doctor to get to the bottom of what’s causing it, but all I know is that I’m ready for my smiley girl to be back to her sweet self.  STAT.
