MPM and we had a block party!

I was all prepared to get on here and tell you all about how busy the week ahead is for us, but then I realized that this “busy-ness” is here to stay and the chaos is our new normal.  Goodbye baby-having, hello kid-raising, right?!?

This full schedule makes me particularly protective of our dinner-time togetherness and in order to make the most of it, I’m determined to keep prep time to a minimum. Let the search for quick/easy/cost-effective/healthy meals commence! Would y’all mind sharing your best, go-to, easy-peasy dinner ideas?

Here’s what’s on our menu this week:

Monday: Buffalo Turkey Meatloaf

Tuesday: Crockpot Meatballs, roasted cauliflower

Wednesday: Slow Cooker Chicken Quesadillas

Thursday: Fix It and Forget It Chicken

Friday: Bubble Up Enchiladas (maybe, just maybe we’ll finally get to them this week…)

In other semi food-related news: We had our block party on Saturday and it was a BLAST!  We already have the best neighbors in town, but then you add in food, a fire truck, balloon animals, an outdoor movie, and s’mores and you’ve pretty much got a night our kids will never forget.  Here’s just a glimpse of the fun.  Much, much more to come!

I'm sooo needing quick easy meals/prep as well. thanks for posting these. I'll post a few when we return from my SIL's wedding.

We do homemade pizza on Friday's. The dough is super easy to make up in the Kitchenaid, then let it rise while you get in some after school play. Gather all your toppings, roll out the dough and let the kids help make it. They get to personalize the way they like it and it's a fun family activity. Usually one of mine joins in to help, sometimes 2 or 3. In a few years it will be all 4, I'm sure and crazy at times, but that's what memories are made of.
