Hey there! How was the weekend? Ours was, again, the perfect combination of busy and relaxing. And by ‘perfect combination’ I mean, a little more relaxing than busy. Obviously. I even had a chance to squeeze in a nap AND read part of a book. Not a blog. Not the newspaper. Not a magazine. And not emails. But an actual, real life, turn the pages, book. It was de-lightful.
Last night we capped off our relaxing weekend with a little kite flying action. And while I didn’t take the time to get my real camera, I did capture these 2 photos of sweet KT. In case it isn’t evident, she was an extremely enthusiastic observer.
In other, very honest news: I’m tired of making meals and everything involved with that chore. Including meal planning. Blah. I pretty much just want to quit. But, let’s be real – there are 4 little people that need to eat. 3+ times a day, 7-days-a-week, 365 days a year – I CAN’T QUIT.
So. I threw together a quick, no-brainer meal plan and will continue doing what I do best…planning, preparing, serving, and cleaning…over and over again. And I WILL do it with a smile and joyful heart because I love them. And because they need me. And because they need to eat. And because I don’t need Child Protective Services knocking at my door.
Here’s what’s for dinner this week:
Monday: Chicken Caesar Wraps
Tuesday: Taco Soup
Wednesday: Cheesy Chicken Crescent Rolls
Thursday: Texas Casserole (carry-over from the last 2 weeks)
Friday: Whole Wheat Sour Cream Pancakes. Again.
What are YOU eating? AND what are your go-to meals when you need a little break from the kitchen?
