Meal Planning Monday – Tuesday Edition.

It sure is difficult getting back into the swing of things after a relaxing 3-day weekend, eh?  This morning as I was walking Addi to the bus stop, I teased her, “Can’t you just stay home with me again today?  We have so much more fun with you home to entertain us.”  It’s the truth and I was serious.  But she laughed and said, “Oh, Mom.  You’ll be fine.  Besides, those other 3 make me tired when I’m home.”  Me too, kid.  Me too.

Right now, though, those “other 3” are sleeping/resting and I’m taking a moment to get caught up on our meal plan for the week.  It’s going to be a busy one, so we might end up flying by the seat of our pants a bit, but here’s what I’ve got so far.

Monday: We had WW Philly Cheese Steak Sloppy Joes (made with ground turkey)

Tuesday: California Club Quesadillas

Wednesday: Taco Soup, followed by Addi’s parent/teacher conference.  A good report…the perfect desert?  I think so.

Thursday:   Turkey Enchilada Pie

Friday: Bacon Ranch Slow Cooker Chicken

I shared last week that I’ve been doing Weight Watchers and that I’m really enjoying it.  But what I didn’t tell you is that my hubby has been losing weight like it’s it job lately, too.  He’s not doing WW, but he is counting calories and working out like a maniac.  He’s down almost 25 lbs. in less to 2 months.  2 months, people!  How awesome is he?!?  Very. Anyway, while we’re trying to be mindful of not obsessing or talking too much about weight in front of our kids, they have certainly picked up on the fact that we’re eating healthier and working out more.  In fact, they will frequently join in during workouts – especially Eli.  Well, last week after workout with his dad, E says to me, “Now that I’m getting all of these muscles, sometimes my legs hurt.”  Whaaa?!? 

And, finally, on a related note, Cam stepped on the scale in our bathroom this morning and says, “Mom, guess what?!?  I am 3 {‘free’} 4 dollars!” Ha!

These kids crack.me.up.

Addi's comment about those three making her tired cracked me up! Something a wise oldest child would say! So funny and cute!
