Meal Planning Monday!
J headed off to his first day of school this morning and that was my cue to get my meal planning booty back in gear. So, here it is! Groceries are bought and I've got my game face on.
Monday: Sweet Potato Sausage Bake
This sounds...umm...interesting...but good. I figured we'd step out of our comfort zone a bit and give 'er a try.
Tuesday: Chicken Enchilada Pasta
Wednesday: Crockpot Peanut Butter Chicken
4 boneless, skinless chicken breasts
1/3 cup peanut butter (I use a little more)
1 cup chunky salsa (again, more is better -- in my opinion)
2 Tablespoons lemon juice
1 Tablespoon soy sauce
2 teaspoons finely minced ginger root
1/4 cup chopped peanuts
In a 3-5 quart crockpot, mix all ingredients except chicken and chopped peanuts. Add chicken and stir to coat. Cover crockpot and cook on low for 8-9 hours or until chicken is no longer pink in the center. Sprinkle with chopped peanuts as a garnish.
Thursday: BLTs and sweet potato fries
Praying the garden gods show favor on our 1,928 currently green tomatoes or we will be dining on just BL's, no T.
Friday: Baked Ziti
Saturday: Block Party!! I love me a good potluck. Uh-huh.
