I have a post all about the race written up and waiting for pictures from my mama, but until then I thought I'd share one of our new favorite recipes from Balancing Beauty and Bedlam.
Peanut Butter and Jelly Noodle Salad
*I doubled this and had enough for leftovers twice!
1/2 c. peanut butter
1/3 c. jelly
1/4 c. Italian dressing
8 oz spaghetti, cooked, drained, and rinsed with cold water
1 small cucumber peeled, seeded, and chopped (I didn't seed mine and it was fine.)
1 small red bell pepper, sliced
1 green onion, thinly sliced
*next time I plan on adding some cooked chicken for my "meat and potatoes" man.
Cook and drain spaghetti noodles. Chop and slice veggies. Microwave PB&J for 30 seconds, whisk until smooth. Stir together all ingredients and serve at room temperature.
This is a perfect summer meal and would even be good to take to a potluck. Giver 'er a try.
