NYE and Recipes

Our New Year's Eve was probably pretty lame by most adult, non-parent standards, but for us is was pretty perfect.

We camped out in the living room with tents, sleeping bags, pizza, popcorn, and movies.  Impressively, we all almost made it to midnight.  I was too busy having fun to take many pictures.  There's just something about lounging around in warm pajamas with the ones I love that makes me wish time would just stand still.  Know the feeling?

I've had a couple people ask for a few of the recipes from our menu this week.  So I figured it would be easier to post it on here, than to type them out multiple times.  Plus, then when I lose the recipes (which I'm sure to do!), they'll be here. 

Hope these don't disappoint.

Chicken Caesar Pasta Bowl (I have NO idea where I got this one, so if it's yours...fess up!)

1 T. veggie oil
1 lb. chicken breasts, cut-up (I use pre-cooked, pre-cut pieces)
1 can cream of celery soup
1 cup of water
1/3 cup Caesar Dressing (I usually end up using more)
1 cup cherry tomatoes, cut in half
4 cups linguine pasta, cooked (I use the whole box)
grated parm

Heat oil in skillet and cook chicken. Add soup, water, and dressing.  Heat to a boil. Add tomatoes. Cover and cook over low for 5 minutes.

Toss with linguine and serve with parm.

Bacon & Veggie Skillet (again, is it yours??)

4 slices cooked, chopped bacon (I'm lazy and use pre-cooked, pre-crumbled)
1 medium onion
1 can chicken broth
2 cups elbow macaroni
4 cups mixed veggies
4 ounces cream cheese
2 T. parm

Cook bacon, add onion and cook.  Add 1 cup of water, chicken broth and mac to skillet. Bring to a boil, then simmer 10 minutes. Add veggies and cream cheese. Cook until melted through. Top with bacon and parm.

Ranch Pasta Skillet (via Simply Sweet Home)

{to me this one tastes like tuna and noodles, only with chicken and better.  I'm NOT a tuna girl.  Or any seafood for that matter...much to my husband's dismay.}

2-3 cups egg noodles
2 cans chicken breast
2 cups milk
3/4 cup water
1 packet of ranch dressing
1 can cream of chicken soup

Spray skillet with cooking spray. Pour soup in and 1/2 dressing mix. Mix well. Add chicken. Mix well. Add uncooked pasta, milk, remaining dressing mix, and water.  Stir. Heat to boil. Cook 10 minutes over medium heat. Let stand to thicken.

Crockpot Meatloaf

{Ok, the recipe is actually for "Crockpot Bleu cheese and dried cherry meatloaf" but I'm adapting it to make mine a little more husband friendly.}

1 lb. ground beef
1 egg
1 t. seasoned salt
1/2 t. black pepper
1 t. onion powder
1/2 cup bread crumbs
And whatever fixins' you'd like.  I'm adding sharp cheddar cheese and onion.  The original recipe calls for 1/2 c. dried cherries, 1/2 cup bleu cheese crumbles, and 1 T. basil.

In large mixing bowl, mix meat, spices, "fixins'", bread crumbs, and egg. Spray crock pot with cooking spray (or use a crock pot liner like me!  See?  Lazy.) Put meat in "glob" in the center of crock pot.  Cover and cook on high for 4 hours or on low for 7-8 hours.  I've tried to kind of watch mine carefully and move it around if necessary so the outside doesn't get too done.

I've got restless children and a dog that thinks he's starving to death, so I'll save the Zesty Italian Crescent Rolls for another day.

Oh my goodness, I absolutely LOVE your NYE idea...we might have to steal it and "camp out" next year...although I only made it til about 9 on New Years!!!

Your NYE was exactly like ours....I loved it!!! These years will pass by way to quickly! AND thanks for all the recipes...looks like some good stuff!
