Meal Planning Monday...

Monday: Spicy Sausage Pasta

Tuesday: Hawaiian Haystacks

Wednesday: Beef Roll-ups

2 lbs ground beef
1 onion, chopped
1 can enchilada sauce
2 cans cream of chicken soup
3/4 cups water
1 can green chili peppers
3/4 lb. velveeta, cubed

Brown ground beef. Place all ingredients in crockpot. Stir to mix. Cook on low 7-8 hours. Serve with warm tortillas.

Thursday: We're grilling out with our Breaking Bread small group from church.  I'm planning on taking a Grape salad and {this} yummy ice cream sandwich dessert.

Friday: Salsa Chicken and Rice Casserole

1 1/2 cups uncooked white rice
3 cups water
4 skinless, boneless chicken breast halves
2 cups shredded montery cheddar cheese
2 cups shredded cheddar cheese
2 cans cream of chicken soup
2 cans Rotel

Cook rice. Grease 9x13 baking dish and add rice. Cook chicken (or be like me and buy the pre cooked, pre cut chicken for convience!) and place on top of rice. Combine Rotel and Cream of Chicken. Add cheese to top. Bake @ 350 for 30-40 minutes.

Love the roll-up recipe, will be adding it to the rotation! Also, the ice cream dessert..I make this but also add some chopped up Butterfingers or Reese's PB cups to the layers, you can never have too much sugar in my dessert!
