You guys have heard of Edie over at Life in Grace, right? She's pretty much my hero and I want to be her when I grow up (minus a couple kids and the doctor part). She's wonderfully well-rounded, colorful, and deep. Plus, the girl can cook!
The other night I made her "Spicy Tomato Soup with a hint of blue cheese." And here's the thing -- I don't like tomato soup! But this. This, my friends, was heavenly. I am posting the recipe for this goodness, hoping that you, too, will be able to get past whatever anti-tomato soup biases you might be harboring and try it! It won't disappoint.
And, please, do not let the "spicy" part deter you. I used the recommended amount of hot sauce and it wasn't the least bit spicy. In fact, I ended up doubling the amount just to give it a little, tiny kick.
Without further adu...
Spicy Tomato Soup with a Hint of Blue (Bleu??) Cheese
Splashes Olive Oil
1 small onion
2-3 cloves garlic
28 oz can of tomatoes
14 oz can diced tomatoes
1 cup chicken broth (I think I used the whole 15 oz can??)
2 T. honey
1/3 cup cream
1 small squirt of hot sauce
handfull of basil leaves
1 oz. blue chesse (I used a little more)
Salt and pepper to taste
Saute garlic & onion. Add tomatoes with juice. Add all ingredients except cream and let simmer. Use a submersion blender to achieve desired consistency. Add cream.
That's all. I promise that this will be unlike any other tomato soup you've tried.
