It's probably no surprise to you that I wasn't on the ball enough to post this yesterday. And it's also probably no surprise to you that I loathe the task of meal planning and grocery shopping. However, what might be a surprise to you is that I have actually learned to like cooking.
I use that term loosely, of course. I enjoy finding meals that take minimal time and even less effort. I enjoy feeding my family food that they like. And it is always a bonus when I can feed them well-rounded, nutrious meals. But I have to be honest -- it's not my top priority. Sad, I know. At this point in my life, cost and time are of the utmost importance. Nutrition, unfortunately, comes in as a not-so-close second. And I'm ok with that -- for now.
Don't get me wrong. I strive to offer both a fruit and a veggie, as well as some type of protein with every meal. However, casseroles, crockpot meals, and and pastas aren't necessarily known for their nutritional content. What they are known for, however, is their cost effectiveness and efficiency. Two of my favorite words.
So, now that we've established that I will not be winning mother of the year in the nutrition category, let's move on to this week's menu at casa de Starr. Shall we?
Last night we dined on this "Quick burrito skillet" I found on the Kraft website. J and I ate ours over a bed of lettuce, but decided that it was just as good solo. Everyone here gave it two thumbs up.

Tuesday: Ziti (thanks, Lizzie!)
Wednesday: Sweet & Spicy Chicken Stirfry
Thursday: playdate with friends...we're treating ourselves to pizza and I won't feel a bit guilty about eating it or taking the easy way out when entertaining friends.
Friday: J's out of town at a baseball coaches conference, so the kids and I might do dinner with my mom and dad. But if not, we'll probably throw together some chicken quesadillas.
Saturday: Birthday party for our niece = no cooking for me. Can I get a "woo-hoo!"???
Sunday: Pulled pork
So, I want to know. What's for dinner at your house? (And, if it is better than what we're having, can I come?!?)
