Here's what is for dinner at our house tonight:

Ravioli Lasagna

26 - oz jar marinara or pasta sauce
Two 13-oz packages of cheese ravioli
1 1/2 cups shredded part-skim mozzarella cheese
(yes, that's it!)

Spread 1/2 c. marinara sauce in bottom of baking pan.
Spread 1 pkg. of ravioli in a single layer on sauce. Top with 1 c. sauce and 1/2 c. cheese.
Layer the second pkg. of ravioli on top, then 1 cup sauce and 1 c. cheese. Cover pan with foil and freeze until ready to use, or bake, covered at 400 degrees for 30 minutes, then uncovered for 5 to 10 minutes.

To bake frozen: 400 degrees, bake covered for 1 hour. Remove foil and continue baking until cheese is melted and starting to brown and inside middle is hot, about 25 minutes more.

Don't tell my family, but I added a few veggie purees to the marinara just to up the nutritional value a little. Still not healthy by any means, but it makes me feel better.

I would love to give credit to whomever gave me this recipe, however, I didn't write it down. So, if it's yours, fess up!

I also think I'm going to try a new veggie: Swiss Chard. This is a recipe I got from one of my blogging buddies, Kate. Sounds easy & yummy enough, but I'll let you know how it goes.

On another note, we had a wonderful weekend. The weather was gorgeous, so we were able to be outside. My handyman husband got tons of yard/housework done and they kids & I got lots of playing done.

Maybe you should start your own recipe blog... see, that could be part of your DMACC class entitled "BLOG143"... like how I tied that handy number in there?? :) PS: I'm stealing the recipe :)

I have all of the ingredients for that recipe and I'm going to make it one of these evenings. It sounds delicious! Your children are adorable!!! It's been fun to peek onto your site. :)
